Oven Roasted Butternut with Goat Milk Feta

5 servings | prep: 15 mins | cook: 30-35 mins

Ingredients:

  • Large whole butternut, 

  • 2 minced garlic cloves,

  • 60 ml roasted pumpkin seeds, 

  • 60 ml sunflower seeds, 

  • 60 ml linseed,

  • 60 ml sesame seeds,

  • 5 ml dried ginger, 

  • 30 ml extra virgin olive oil, 

  • course salt & ground pepper,

  • Hoekkraaltjie Goats Milk Feta.

 

Method:

  • Pre-heat oven to 200ºC, and grease an oven-proof dish,

  • Toss chopped butternut, minced garlic & olive oil 

  • Add the rest of the ingredients and mix well,

  • Roast in preheated oven for 30 minutes until butternut is tender and browned. 

Great side dish or enjoyed as a meal.
